Oatmeal balls are an easy snack, but most recipes are reliant on peanut or almond butter. I created this recipe to be allergy-friendly, so my youngest could eat them. They are also gluten-free and have no added sugar. Both dates and raisins are also good sources of fiber.

Oatmeal Balls
Ingredients:
- 1 cup rolled oats, gluten-free if needed
- ¾ cup pitted medjool dates, packed tightly
- ½ cup raisins
- ¾ cup coconut butter
- 1 tsp ground cinnamon
- 1 tsp pure vanilla extract
- Pinch of fine sea salt
Directions:
In a food processor, add the dates, cinnamon, vanilla, and salt. Pulse till smooth.
Add in the coconut butter (if your coconut butter is firm, heat it gently in the microwave, in 15-second bursts, till pourable), blend in.
Add the oats, and pulse till just mixed.
Using a 1 Tablespoon disher, make portions, squeeze in your hand to make solid, and roll quickly into a ball.
Store in a tightly covered container, in the refrigerator, for up to a week.
The coconut butter does firm up in the refrigerator, so let it sit at room temperature for 5 minutes before enjoying.
Makes about 17 balls.
