Double Fudge Brownies

Keto-friendly dessert, easy to make, and yes, you can double the recipe easily. The baking dishes I used are glass food storage containers from Costco that are also oven-safe.

I used both dark cocoa powder and semi-sweet chocolate, so this dessert was quite dark in flavor. A light cocoa powder (the normal kind) and milk chocolate chips will produce a sweeter dessert.

Double Fudge Brownies

Ingredients:

  • 1 large egg
  • 1/3 cup full-fat Greek yogurt*
  • 3 Tbs unsweetened cocoa powder
  • 2 Tbsp sugar-free sweetener*
  • 3 Tbsp chocolate chips*

Directions:

Preheat oven to 350°. Lightly oil a 4″ x6″ glass dish (oven-safe), then set it on a rimmed tray.

Mix the egg, yogurt, cocoa powder, and sweetener together till smooth. Fold in 1 Tablespoon of the chocolate chips.

Spread the prepared dish, and sprinkle the remaining chocolate chips over the top.

Bake for 25 to 30 minutes, until set. Let cool.

Makes 1 large dessert.

Notes:

I used Fage 5% Greek yogurt; use one without stabilizers or thickeners, as they can make a baked good watery.

For the swetener, use what you prefer as long as it is a 1:1 type. Stevia, allulose, sucralose, and similar will all work.

Any chocolate chip will work, whether or not it is sugar-free. Lily’s can be found in many grocery stores.

    Oh, and thank you for giving tablespoons the CORRECT ‘spelling’; Tbsp!!! So many use tbsp! (wrong! lol!)
