This baked oatmeal is creamy and smooth, with a nice, rich feel. It’s good both warmed up and cold.

Higher Protein Baked Strawberry Oats
Ingredients:
- ½ cup 4% cottage cheese
- ½ cup unsweetened full-fat Greek yogurt
- 2 large eggs
- 2 Tbsp pure maple syrup
- 1 tsp pure vanilla extract
- ½ cup old-fashioned oats
- Pinch of fine sea salt
- 1 cup diced fresh strawberries + 9 slices
Directions:
Preheat oven to 350°. Lightly oil three baking ramekins.
Mix all the ingredients, adding the strawberries last, and gently mix them in.
Divide between the three ramekins. Top with three slices of strawberry each.
Place on a rimmed baking sheet and bae fo 30 minutes. Let cool a bit before eating, or for later, let cool, then cover and place in the refrigerator. Eat cold or warm up in the microwave for about a minute.
Makes three servings.
