Protein is on the menu this morning. These simple egg bites make it easy to get your protein early in the morning. I actually like to eat them cold, with a bit of hummus on top (think savory frosting).
High-Protein Egg Bites
Ingredients:
- 8 large eggs
- 1 cup full-fat cottage cheese
- ¾ cup shredded cheddar cheese
- 10 Tbsp lower-sodium bacon bits (2½ ounces)
Directions:
Preheat oven to 350°. Line a 12-count muffin tin with parchment paper liners.
Add the eggs, cottage cheese, and cheese to a blender and process until smooth.
Divide the bacon among the lined cups.
Divide the eggs between the tins.
Bake for 30 minutes, then let cool on a rack. Store tightly sealed in the refrigerator.
To reheat, microwave for about 1 minute.
Makes 12 egg bites; serve 2 egg bites per person.
