Pickled red onions are often ignored, but they should be the star of meals. So much flavor and a lil’ crunch. These are perfect for serving whenever you have people over during the holiday season.
Pickled Red Onion Deviled Eggs
Ingredients:
- 10 hard-boiled eggs
- 3 Tbsp mayonasise
- 1 Tbsp yellow mustard
- 2 Tbsp pickled red onion, finely diced + more for topping
Directions:
Cut the eggs in half, and gently scoop out the yolks into a bowl.
Mash the yolks with the mayonnaise and mustard till smooth. Stir in the onions.
Fill the egg whites with the mixture, and top with more pickled onions, if desired.
Chill till serving.
Tip:
Line your serving plate with chopped lettuce to keep the eggs stable.
