Chilly mornings really call for warm muffins, and if they have more protein, so much the better.
I am still working through a box of Kodiak Pancake Mix from Costco, and this was a great way to use it.
I made two batches and froze half for later eating.
Protein Blueberry Muffins
Ingredients:
- 2 cups Kodiak Pancake Mix
- ½ cup unpacked brown sugar
- 1 tsp ground cinnamon
- ¾ cup milk
- ½ cup plain Greek yogurt, full-fat
- ¼ cup melted unsalted butter
- 1 large egg
- 1 teaspoon pure vanilla extract or lemon extract
- ½ cup fresh blueberries (washed and dried)
Directions:
Preheat the oven to 350 ° and line a 12-count muffin tin with parchment paper liners.
Add the dry ingredients to a large mixing bowl and whisk them together until well combined.
Add the wet ingredients to a small mixing bowl and whisk until combined.
Add to the dry mixture and use a spatula to combine. Gently stir in the blueberries.
Divide between the tins, about ¼ cup each.
Bake for 20 to 25 minutes, until golden on top.
Let the pan cool on a wire rack for a bit, then remove it and let it finish cooling on the rack.
Store tightly sealed.
The muffins freeze well for later eating.
Makes 12 muffins.
