Even though I have baked bread in a bread machine for a very long time, I have not made banana bread in one before this. With a hot week in the upper 80s and just touching 90, it has been nice not to turn the oven on. Was it my best banana bread? No, but it was tasty – and the house didn’t get heated up, so that added a star for sure.
Bread Machine Banana Bread
Ingredients:
- 3 large eggs, beaten
- ¼ cup avocado oil
- 1 tsp pure vanilla extract
- 1 cup ripe mashed bananas (2-3)
- 2 cups all-purpose flour
- ¾ cup granulated sugar
- 1 Tbsp baking powder
- 1 tsp baking soda
- ½ tsp fine sea salt
Optional:
- ½ cup finely chopped nuts or mini chocolate chips
Directions:
Directions are for a Zojirushi Home Bakery Supreme bread machine.
Add ingredients in order listed to the bread pan.
Set the bake cycle to “cake” and crust settings to “light”, then turn on.
Check for any flour left on the pan and scrape it off as needed while it is kneading the dough.
If adding nuts or chocolate chips, add when the “add beeps” sound occurs.
Once baked, lift the pan out and let it cool on a rack a bit before turning it out. Let the bread cool completely before storing it in a plastic bread bag.
Makes 1 loaf. Use within 2 days for the best taste.
Notes:
Zojirushi bread machines have their own method. If using another brand of machine, follow your machine’s manual for baking a cake.
