Pea Dip

It sounds unexciting to call it pea dip, but this simple dip is intensely flavored. It would also make an excellent spread on crusty bread to start a sandwich with. It has the thickness of guacamole. High in protein and fiber, with a brightness of spring.

Tip: To thaw peas, measure them and leave them in the refrigerator overnight.

Pea Dip

Ingredients:

  • 2 cups frozen green peas, thawed
  • 3 Tbsp olive oil
  • 2 small lemons, zested and juiced
  • ½ to 1 tsp fine sea salt
  • Ground black pepper, to taste

Directions:

Add the peas, olive oil, and lemon zest to a food processor or blender. Measure 2 Tablespoons of the lemon juice and add. Add half the salt and the pepper.

Process until as smooth as you want it.

Taste for seasoning, add more salt if desired.

Transfer to a serving bowl and refrigerate until snack time.

Note:

If making in a blender, start on the lowest setting and gradually increase the speed. If the mixture stalls, stop and scrape down the sides of the blender, then restart it slowly.
