Savory Cottage Cheese Quick Bread

It’s 4 pm, and you decide to make soup…and a loaf of bread sounds so good with it. But, well, you missed the time point to make bread by hours.

What you need is a non-yeast bread recipe you can pull together quickly, and get baking while you make dinner. And the leftover bread is even better the next day, as it doesn’t dry out.

Savory Cottage Cheese Quick Bread

Ingredients:

  • 3 cups all-purpose flour
  • ¼ cup Parmesan cheese (use fresh, not the green can)
  • 1½ Tbsp baking powder
  • 1 Tbsp dried parsley
  • 1 tsp fine sea salt
  • 1½ cups milk
  • 1 cup 4% cottage cheese

Directions:

Preheat oven to 375°, oil a 9×5″ bread pan.

Whisk the dry ingredients in a large mixing bowl.

Add the wet ingredients and mix with a spatula until just combined.

Scrape into the bread pan, smooth out.

Bake for 60 minutes, check with a table knife if done, the knife should come out clean. If not, continue to bake for up to 10 more minutes. (Our loaf took 65 minutes total.)

Let cool for a couple of minutes, then turn out onto a wire rack.

Store leftovers in a tight container or plastic bag.

Notes:

Use cottage cheese with minimal ingredients – such as Daisy – that do not use gums or thickeners.

The bread will have a crust, which is great for dipping into soups.
