Herb Biscuits

Want an easy biscuit recipe that is so soft and moist? Try using cottage cheese as the liquid. It also adds extra protein to the biscuits, and that is a huge positive. With minimal work, you can have these pulled together and baked in 30 minutes or less.

Herb Biscuits

Ingredients:

  • 2 cups all-purpose flour
  • 4 tsp baking powder
  • ¾ tsp fine sea salt
  • 1 Tbsp dried parsley flakes
  • 1 cup full-fat cottage cheese
  • ¼ cup milk
  • 2 Tbsp avocado or olive oil
  • 1 egg

Directions:

Line a baking sheet with parchment paper, and preheat the oven to 425°.

In a large mixing bowl, whisk together the flour, baking powder, salt, and parsley.

Process the cottage cheese, milk, oil, and egg in a blender till smooth. Scrape into the mixing bowl.

Stir until it just comes together.

Sprinkle a bit of flour on a work surface, and knock the dough out.

Knead the dough a few times and pat the dough out into a rectangle, about ¾” thick. Cut into eight squares, and place on the baking sheet.

Bake for 10 to 12 minutes, until golden on top.
