This recipe makes a quick loaf of yeast-free bread and is ready in under 30 minutes. It’s perfect if you need a side for dinner. It isn’t a tall loaf, so not sandwich material, but is great with soups and stews, with butter on it.
Oatmeal Quick Bread
Ingredients:
- 1 cup rolled oats
- 1 cup all-purpose flour (120 grams weighed)
- 2 tsp baking powder
- ¼ tsp fine sea salt
- 1 cup milk
- 1½ Tbsp honey
- 1 Tbsp avocado or other neutral oil
Directions:
Preheat oven to 450°, lightly oil or spray an 8″ x 4″ bread pan.
In a blender process the oats into a fine flour. Whisk the oat flour, flour, baking powder and salt in a mixing bowl.
Whisk the milk, honey and oil together, add to the dry and mix. Scrape into the prepared pan, bake for 20 to 25 minutes, until golden on top. Let cool for 10 minutes. Knock out gently on a cooling rack, let cool before slicing.
Makes 1 loaf.
