Apple Butter Brownies

I have been looking for ways to use up all the apple butter I canned last fall, and you can use it for applesauce in any recipe where spices/sweetness works. Using the apple butter (or applesauce) drops the amount of oil you need in baked goods, and it works well in brownies. These brownies are moist, cakey and very delicious.

Apple Butter Brownies

Ingredients:

  • 360 grams all-purpose flour
  • ½ cup granulated sugar
  • ½ cup stevia cup for cup sweetener
  • 2/3 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp fine sea salt
  • 2 cups apple butter (or applesauce)
  • ¼ cup avocado or other neutral oil
  • ½ cup unsweetened oat milk (or dairy milk)
  • 2 tsp pure vanilla extract
  • 1 cup semi-sweet chocolate chips

Directions:

Preheat oven to 350°, oil a 9×13″ glass baking pan.

In a large mixing bowl whisk together the flour, sugar, stevia, cocoa powder, baking soda and salt.

In a small mixing bowl whisk the apple butter, oil, milk, and vanilla. Add into the dry, stir until mixed (it will be thick). Add in the chocolate chips, stir in.

Scrape into the prepared pan, smooth out.

Bake for 35 – 40 minutes, or until a butter knife inserted into the center comes out clean. Let cool on a rack before enjoying.

Notes:

You can use all sugar (1 cup), I wanted to drop the amount of sugar in the recipe, so used half stevia, in a “cup for cup” blend you can find in many stores. That way less sugar, but not all stevia, for a lesser chance of complaining from the boys. You won’t taste the stevia at all in this recipe.
