We are homeschooling our boys this year using Oak Meadow for the curriculum. It is Waldorf-lite, and includes culinary time as part of the week. Which, for me, is a wonderful way to teach. We get a break after the early morning learning and work together. Then we get to eat together. The muffins were full of flavor and moist. Only downside is just 6 muffins. Next time we will double them.
Banana Date Muffins
Ingredients:
- 2 large ripe bananas
- ¼ cup neutral oil, such as avocado
- ¼ cup pure maple syrup
- 2 large medjool dates, pitted and diced
- ½ tsp fine sea salt
- 1 tsp ground cinnamon
- 1½ tsp baking powder
- 150 grams all-purpose flour (1¼ cups)
Directions:
Preheat oven to 350°, line a 6 count muffin tin with liners.
Mask the bananas, add to a mixing bowl. Stir in the oil, maple syrup, and dates.
Add the salt, cinnamon, baking powder, and flour. Mix till just combined.
Divide equally between the cups (they will be very full).
Bake for 25 to 30 minutes, until golden on top and they look done (or use a toothpick in the center of one muffin, if it comes out clean, it is done).
Let cool on a rack.
Makes 6 muffins.
