Walker found a copy of The Geeky Chef Cookbook at the local library and came running in, begging, that I make him the “Inspired By Adventure Time” Bacon Pancakes on page 78-79. The recipe was solid, tasted great and Walker was so happy over it. (Note. I doubled the recipe and that reflects below. If I am making pancakes, I am making PLENTY).
The cookbook is a fun one, it is recipes inspired by Game of Thrones, Doctor Who, Harry Potter, Minecraft and other similar shows/movies. Apparently the pancakes were to be sword pancakes, so yeah, double bonus with the boy. If you love geeky shows, it’s a fun cookbook to check out.
Bacon Pancakes
Ingredients:
- 2 cups all-purpose flour
- ¼ cup granulated sugar
- 2 tsp baking powder
- 1/8 tsp baking soda
- 1/8 tsp fine sea salt
- 1½ cups buttermilk
- ¼ cup butter, melted
- 2 large eggs
- 10 strips bacon*
Directions:
*We used precooked bacon strips. If you use raw bacon, cook it till crispy, then drain well, patting off any grease with paper towels. I don’t usually love processed food, however the precooked bacon is crisp and crunchy, without tons of grease. You can find natural versions in many stores, without preservatives.
Preheat a griddle over medium heat.
Whisk the flour through sea salt together in a large bowl.
In a small bowl, whisk the buttermilk, butter and eggs together.
Pour over the dry, whisk till it just pulls together.
Melt a tiny bit extra butter on the griddle, place 2 to 3 strips on the griddle, with plenty of space between. How many depends on the size of the griddle. Ladle pancake butter on top, making a rectangle.
Let cook till showing bubbles on top and bottom is golden brown. Flip and cook for another minute.
Repeat until done, stashing pancakes on a cooling rack if needed, to avoid getting soggy.
